Summer gratitudes

1. I am making a new cucumber salad recipe, courtesy of an issue of Cook's Country that came to my hands. I think the trick of seeding and pre-slicing the cucumbers and letting them rest on a paper towel in the fridge for 20 minutes will indeed help keep the cucumbers crisp, and I flavored the salad with mint from my one garden bed. \o/!

2. One giant load of wash is in the dryer, another load of towels is in the wash, hallelujah.

3. I'm going to oven-roast salmon tonight, glazed with soy-sesame-miso-ginger-garlic and a smidge of maple syrup.

4. I had a morning of self-care (therapy followed by massage). My friendly neighborhood massage therapist tells me that she encounters a lot of people's necks and that they are not supposed to feel like corded steel cable. Well okay then. :-)

5. I got to have lunch with [personal profile] squirrelhaven, and will get to have dinner with [personal profile] sanj and [personal profile] kouredios. What a delightful day. :-)

Now is the time to call your Senators. Yes, certain GOP senators are particularly critical, but honestly, call yours no matter who you are or where you live. This is about protecting Medicaid, the general healthcare infrastructure in this country, and also denying Trump a win so that GOP feels more compelled to boot him out. On every level, GOP attempts to repeal ACA must be fought.

And yes, even if you called before - call again.

+ the Black Panther stuff all looks AMAZING
+ Thor: Ragnarok looks delightfully charming
+ Infinity War looks like a hot mess but features beardy Steve in a black stealth suit and Bucky with a new arm, so I'll get over Natasha's blonde hair, I guess. The ability of any movie to service so many characters, otoh...
+ Justice League looks like two separate movies being smooshed into one - I am into Wonder Woman and Aquaman, as well as Alfred and Jim Gordon, but skeptical of everything else. is this a spoiler? )
+ The Star Wars books in the lead up to The Last Jedi look like fun (CHEWIE AND THE PORGS! Legends of Luke Skywalker! A 16yo Princess Leia book! A Canterbury Tales-like anthology! With authors like Ken Liu and Elizabeth Wein and Saladin Ahmed in addition to Claudia Gray and Chuck Wendig!) I am excite!
+ I like that Captain Marvel is going to be set in the 90s - it explains why they cast someone so young as Carol, though I wonder if that means they'll recast for present-day Carol or what. And Nick Fury will be there! And maybe we could get a Peggy Carter cameo!

I'm sure there's more I'm forgetting atm, but work keeps interrupting. Sigh.

am working on Vividcon plans. we just spent 4 days trying to trap an injured feral cat on our property (we were successful. or rather all the people who did the work were. I was cheerleading and getting sunburned) so we've fallen waaaaay behind.  and today we are off to see a specialist that we've been trying to see for 10 months (he travels doing medical research). and [personal profile] xlorp is in the midst of emergency coverage for 2 co-workers who are out on family leave/vacation. and....

recipe: sour cherry cobbler

This recipe is a bit fussier than cobblers I've made in the past and takes a bit longer. It's also tastier and keeps better, so for me, at least, the tradeoff is worthwhile. The biggest time commitment is pitting the damn cherries, so have an effective and efficient pitter on hand before even contemplating this recipe.

Sour Cherry Cobbler

The timing here, ideally, is that you make (and start to bake) the biscuit topping while the cherries macerate, and then you cook the cherry syrup while the biscuits are in the oven, and everything is ready for assembly at about the same time. This requires pitting the cherries in advance! You can also pit the cherries in advance and stick the macerating cherries in the fridge for several hours (even overnight) and then make the biscuits and cherry syrup later, but once you've made the biscuit topping, you are committed.

The recipe as given fills a 9x13 baking dish. It can easily be halved for an 8x8 dish.

FILLING:
1 1/4 cups sugar
3-4 Tbs cornstarch or tapioca flour (depending on how juicy the cherries are)
pinch salt
4 lbs (6-8 cups) fresh sour cherries, pitted (NOT sweet Bing cherries!)
1 cup dry red wine (or cranberry juice if you don't do wine, but I vote for the booze)
1 3-inch cinnamon stick
1/4 tsp almond extract (optional)

TOPPING:
2 cups unbleached all-purpose flour
6 Tbs sugar, plus extra for sprinkling
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
6 Tbs (3/4 stick) cold unsalted butter, cut in pieces
1 cup buttermilk

Make the filling: stir together the sugar, cornstarch, and salt in a large bowl. Add the cherries and stir to combine. Add the wine and let the cherries macerate for at least 30 minutes. Drain the cherries in a colander set over a medium bowl. Put the cherries in the baking dish; bring the juices and the cinnamon stick to a simmer in a small-to-medium saucepan over medium heat, whisking frequently, until the liquid thickens to a syrupy consistency (about five minutes). Discard cinnamon stick and stir in almond extract. Pour hot juices over cherries in baking dish.

While the cherries macerate, make the topping: In a food processor, combine flour, 6 tablespoons sugar, baking powder, baking soda, and salt. Scatter butter pieces over and process until mixture resembles coarse meal, about 15 one-second pulses. (If you don't have a food processor: whisk dry ingredients together and cut in butter using a pastry comb or a couple of forks or however you usually make biscuits.) Transfer to medium bowl; add buttermilk and toss with rubber spatula to combine. Scoop 12 biscuits onto baking sheet, spacing them 1 1/2 to 2 inches apart. (If halving the recipe, scoop 9 smallish biscuits.) Sprinkle biscuits evenly with a tablespoon or two of sugar and bake until very lightly browned on tops and bottoms, about 15 minutes. Remove biscuits, but don't turn off oven.

Arrange hot biscuits over filling. Bake cobbler until filling is bubbling and biscuits are deep golden brown, about 10 minutes. Cool on wire rack at least 10 minutes or you will burn your mouth, not that I know this from experience or anything. Leftovers, if there are any, keep surprisingly well in the fridge for several days.

I don't actually remember the genesis of this idea, but there's a post in my LJ that says, So I said to [personal profile] angelgazing, "Tell me not to write the story where orgasms make Cassie's visions clearer" and she said, "you should TOTALLY write that story" and two weeks and 13k words later, I wrote the story. Which is basically how these things go when [tumblr.com profile] angelgazing wants me to write a thing, especially if I already kind of want to write it anyway.

All through the writing of this story, Cassie was 15. Cassie was 15 right up until I actually posted. Then I had a conversation with [personal profile] snacky and decided to make her 16 instead. I don't think it makes it better? But maybe some people are slightly less squicked? Idk.

I'm a 33 year old Scottish woman, trying to get my journal groove back. I'm a mum of three boys from teen to newborn, and work in healthcare but (thankfully) I'm on maternity leave just now. I mainly write about daily life, the struggles and highlights of attempting to adult and parent and be healthy as a highly strung, stressed over-thinker who doesn't like herself most of the time.  

Wow, I sound fun.  Should I mention that there will be wine, gin and chocolate?

I was obsessed with my Livejournal back in the day - I started it back in 2003 and even though I've only dipped in and out of it in recent years, writing is still very much how I make sense of my life and my mind. That's why I'm trying to reignite that obsession I once had...though it's difficult with increasing grown up responsibilities and shrinking time of my own to put pen to paper fingers to keyboard.  But I know I need the chance to record snatches of life as it flies past, and an outlet for when my mental health takes a dive. 

I swear and I like to write no-holds-barred.  I'm very liberal and support choice - be that choice of who you love, choice over your reproductive options, or just the freedom to chose what you're going to watch on telly tonight. I'm doing my Masters in weight management so I try to live healthily through fitness (like dancing and weight training, albeit on a very beginner level) and healthy eating, but more often than not find myself alone amongst the crumbs at the bottom of a packet of biscuits. I'm book obsessed (mainly literary fiction and never fantasy, chick-lit, or much sci-fi), love a good tv series (Mr Robot, Stranger Things, The Handmaid's Tale, OITNB, Top of the Lake and Homeland have been recent highlights), and sometimes I even get out to see friends.  Some or none of this may come out in my writing.

Along with a lack of time, I guess part of why I've lost touch with my journal has been my shrinking friends list.  It's hard to make time to update when it feels increasingly like you're just shouting into a void. So I'd love it if anyone out there who is in a similar place in life or who is into similar things would like to take a punt on my journal.  I wont promise a very active journal but I am going to try, and I'm also going to try and be a good friend in return.

It's a good job I've been with my husband for ten years, because I'd suck at filling out a dating profile.  Feel free to swipe left (or is it right...? I'm not on Tinder).

Didn't I already do this one? Like, twice? Wait; this list has both "preteen years" and "childhood" songs - am I supposed to consider those as two separate, distinct categories? Does "preteen" mean 10-13 and "childhood" mean before that? If that's the case, then I messed up the "preteen" thing, because from where I am now, that's an awfully narrow slice to try to sort out. I mean, there are plenty of online lists that could help me put songs into the before-and-after 10th birthday groupings, or whatever it intended, but I'm really not going there.

But okay; I do actually have a playlist of "early childhood" songs, so I can grab a few from there. Even though several of them are TV show theme songs.

...omg, there's a whole generation who doesn't understand how nerve-wracking it was to watch them never get off that damn island.
